Iberian Acorn-fed Ham with Denomination of Origin Dehesa de Extremadura



In Extrem Puro Extremadura they produce Pure Iberian Acorn-fed Hams, both on the bone and hand cut in a traditional way. They obtain their ham from the hind legs of the pig because it is bigger and longer. This is the most respected part of the Iberian pig, with less fat and a longer curing time, characteristics that give it more delicate and complex aromas.


The intense red colour veined with bright white fat is typical of their Jamón Ibérico. Juicy and tender, with a penetrating, subtle aroma, it melts in the mouth and has an intense flavour, complex and elegant, with hints of sweetness and acorn.


Curing time: minimum 36 months in our drying houses in Montánchez


Approximate weight: 7-8 kg


Grazing:  fed on a diet of acorns and wild grass during the 6 months it roams freely in the Dehesa

Dehesa of Extremadura

The Dehesa is the natural habitat of the Iberian pig, a species that is indigenous in the Iberian Peninsula. It consists of wooded areas with holm oaks and cork oaks from Mediterranean forests and is used as pastureland for the animals. These are natural ecosystems protected by the EU because of their ecological value, and are conserved by the presence of the Iberian pig.


This landscape is in the very heart of Extremadura, one of the four Spanish regions with a denomination of origin, a name that is renowned for the quality of its products. It is also part of the best conserved ecosystem in Europe.


The Dehesa stretches for more than 9,000 hectares (all furnished with the ISO 14001 environmental certificate) and this is where the Iberian pigs roam from October to March, grazing on acorns and wild grass in harmony with the environment.
