Torto with Cabrales

Torto cabrales cheese Asturian recipe

Ingredients

50g corn flour

– 12g wheat flour

–  1g sugar

– 60ml warm water

– 50ml double cream

– 50g caramelised onion

– 2 eggs

– 7g cabrales cheese*

Preparation

PREPARATION OF TORTO DOUGH

1. Mix the wheat flour, the corn flour, salt to taste and sugar in a bowl. Add the warm water slowly until the dough has a good consistency.

2. Allow the dough to rest in the fridge.

3. Put them between baking paper and using a tortilla maker (or by hand), squash them in to flat discs.

4. Make a small hole on top.

 

PREPARATION OF CABRALES SAUCE

1. Reduce the milk cream with the cabrales or blue cheese. Then mix with the caramelised onion.

2. Add 1 full egg and an additional egg yolk, take the pan from the heat and mix until you make a creamy sauce.

PREPARATION OF TORTO

1. Fry the torto discs.

2. Add the creamy cabrales sauce on top of the torto fried discs. Top with chive
