ALBERT ADRIá'S COOKBOOK 2014
In June 2014 we welcomed Albert Adriá for an evening of authentic Spanish gastronomy at Ibérica Farringdon. Those not lucky enough to attend the meal are still able to experience Albert Adriá’s exceptional culinary talents in the form of two special tapas from his restaurant Tickets that will be served throughout June 2014 in Ibérica restaurants thanks to his recipes.
This small selection of our recipes created by our Executive Chef, Nacho Manzano, of Two Michelin Star Casa Marcial & 1 Michelin Star La Salgar, is for you to follow in your home.
Nacho has taken traditional recipes from his childhood and given them a contemporary edge to hold their place in Spain’s ever changing gastronomy, from an Asturian traditional dish as Pitu Rice, his delicious ham croquettes & his signature dish Gazpacho of red berries & beetroot.
Executive Head Chef, Nacho Manzano of Casa Marcial in Asturias, selected some of his favourite Asturian recipes for you to enjoy cooking at home. These dishes also form part of our 2012 Autumn menu, interpreted by Nacho and his team from the tastes and flavours of dishes from home on which they grew up. You can find inside its pages the recipes for Corn torto fritter with Cabrales cheese scrambled egg, the traditional dish Asturian fabada & Ibérica’s signature dish Seared scallops with cauliflower puree & escabeche.
