250 gr of semi flour
6 gr of duck fat
10 gr of fresh leavening
15 gr of sugar
50 gr of milk
2 gr of salt
90 gr of water
3 cans of tuna belly
1 golden apple

Heat in a pan the yeast, sugar, milk, salt until water up to 32 º.
Remove from the flame and add the flour and the duck fat and put into the kneading.
Let knead during 15 minutes in a medium speed.
With the dough we prepare marbles around 10 gr each one, letting ferment during half an hour, and bake in the oven during 10 minutes.
Cut in julienne the apple, the center of the celery and the onion, season it with olive oil and salt.
Pre- heat the bread, we split in half and half and refill it with the tuna belly and the apple salad (you can add mayonnaise)
