Roast chicken stuffed with dried fruit

INGREDIENTS

For the stuffing
75g dried apricots
75g raisins
75g dried figs
200ml brandy (to cover and soak fruit)

150g chopped onion (1 small onion)
150g chopped carrot (1 carrot)
80g chicken pate
Oil

For the chicken
4 boneless chicken legs
Salt
Black pepper

For the garnish
1 white cabbage, thinly sliced
12 mushrooms, chopped in quarters
Salt

For the sauce
Juices from the chicken
Chicken stock (only if needed)
Fresh thyme
Teaspoon of butter
